No recipes yet? How about some homemade Carrot and Coriander (Cilantro) Soup? Perfect for this time of year.

Ingredients:
Drizzle of olive oil and a knob of butter
1 lb carrots, sliced
1 potato, cubed
1 onion, chopped
2 cloves of garlic
1 tsp ground coriander (cilantro)
2 pts vegetable stock
Bunch of fresh coriander (cilantro), chopped
Juice of ½ lemon
Salt and black pepper, to taste

Method:
Heat oil and butter in a large pan. Add onion, carrots, potato and garlic. Sauté for a few minutes, until softening, whilst adding the ground coriander and seasoning mid-way.
Add stock and bring to the boil. Cover pan and simmer for 20 to 30 mins.
Stir in fresh coriander (cilantro) and lemon juice.
Pour into a blender. Blend until smooth consistency.
Garnish with a few fresh leaves of coriander (cilantro).
Serves 4-6
