Growing up, My mother was on a salt restricted diet also so, she made most meals low salt. One of my favorites was a Chicken Cacciatore she often made. It's not the Typical Chicken Cacciatore, but it is Very good and easy to make. I still make it today but now need to cut down on the Sodium in it also. If you don't need to worry about it, then just ignore sodium comments
it calls for 1.25tsp of salt, and that's a lot, especially when you consider the sodium in the other ingredients, so she always made it without it.

1lb of Chicken Breast, cut into 3/4-1 inch cubes
1/4C. Flour
1/4C Oil
1 Md Onion, Coarsely chopped
1 Md Green Pepper, Coarsely Chopped
4-6 oz of white button mushrooms, sliced or roughly chopped
1 clove Garlic, minced
1/8 tsp black pepper
2 bay leaves
1tsp Dried Italian Seasoning
1tsp Dried Basil
1tsp Dried Oregano
1tsp Dried Parsley
1 can (16oz) tomatoes (only about 10-15mg sodium per serving)
1 can (8oz) tomato sauce (can have 100mg or so per serving)
(she often just used a 28oz can of Tuttorossa Tomato Puree and so have I. Works ok too and only 15mg per 1/4 cup)
1/4 C. Dry White wine (I use Holland House Dry White Cooking Wine - 380mg for 1/4cp... kinda high.)
2 tbsp Fresh Chopped Parsley (Optional)
Coat chicken (or can use scallops) pieces with flour.
Add oil to a large sauce pan/pot and Heat to 375ยฐ (medium to medium high heat) or until hot.
Add Chicken (or scallops) and brown, turning as needed.
Remove chicken (or scallops) from oil when lightly browned.
Stir in onion, green pepper, garlic, mushrooms and sautรฉ for 3 minutes.
Return chicken to the pot.
Add Pepper, bay leaves, Dried Seasonings, tomatoes, tomato sauce and white wine.
Cover and reduce heat to 200ยฐ-225ยฐ (low to medium heat), about 30-35 minutes for chicken and 20 minutes for scallops.
Stir occasionally during cooking time
Serve over white rice and garnish with parsley
serves 4-6 = 124-83mg (or less if you use a dry drinking wine and just puree)

Oh.... I also just wing it sometimes and don't measure anything. The peppers, white wine and bay leaf really makes it so, as long as I put enough of each, its still good ๐Ÿ™‚
